Tomato Bisque

Serves 4

Ingredients:

  • 3 Carrots, diced

  • 1 bunch of Green Onions, sliced

  • 1/2 stick Butter

  • 2-3 tbsp Flour

  • 1 carton Chicken Stock

  • 4 cans Diced Tomatoes

  • 5 Bay Leaves

  • 1 carton Heavy Cream

  • Spices, adjusted to taste: 3 tbsp Italian Seasoning, 1 tbsp Sage, 1 tsp Thyme

  • Salt and pepper to taste

Instructions:

  1. Sauté vegetables with butter.

  2. Stir in flour to make roux.

  3. Deglaze with chicken stock and let simmer until carrots are soft.

  4. Pour in cans of tomatoes and add bay leaves and other seasonings.

  5. Simmer for 40min.

  6. Remove from heat and take out bay leaves.

  7. Use an immersion blender until all the vegetables are blended in.

  8. Add a carton of heavy cream.

  9. Serve with bacon bits and cheese for garnish as desired.
